Engine heat is dissipated much more evenly with a water cooler than with an air cooler. It is also known as indirect cooling, because the excess heat is not dissipated directly to the ambient air, but to a cooling liquid.
Today's engines almost exclusively use forced circulation cooling via a pump. The pump driven by the engine ensures a high circulation speed of the coolant. The high throughput in the water cooler ensures good heat dissipation.
